Real Life Recipes #1 – Blueberry Tuna Salad

One of the things that I’ve been asked many times since starting this blog is… Do you cook 3 full meals every day? I wish I could say yes, but with a full time job and lots of other responsibilities that would be impossible. So, I thought I would do a series of ‘Real Life Recipes’ – better known as “the things I throw together for quick meals.”

First up….one of my favorite Tuna Salads. In this simple salad you get the good fats from the avocado, the omega 3 of the tuna, and the vitamins of the veggies. You could almost call it a superfood salad with avocado and blueberries both in the mix.

Here are a few interesting health benefits of avocados:
(1) avocados have 35% more potassium than bananas
(2) they contain oleic acid which is linked to inflammation reductions
(3) one serving contains more than 25% of the recommended folate (especially helpful for pregnant women) and more that 20% of the vitamin K for the day
(4) they may help lower cholesterol and and reduce the risk of diabetes and stroke
(5) they provide the lutein necessary to protect your eyes from age related eye degeneration

Tuna Blueberry Salad
– 1

Time – 5 minutes

– 1 can tuna
– 1 avocado
– 1 cucumber
– 1 cup chopped kale leaves (or favorite salad greens)
– 1/2 cup blueberries
– 2-3 radishes and/ or a bunch of spring onion greens (both give it a bite of spicyness)
– juice of 1 lime
– sprinkle of sea salt

– mash avocado
– add tuna to the mashed avocado
– mix in cucumber, greens of choice, radish and/ or spring onion and lime juice until well combined
– top with blueberries
– the favors blend well in the fridge so it’s perfect to prep in the morning and take to work for lunch
