Real Life Recipes #2 – Breakfast Stuffed Sweet Potatoes

This is the second post in a series called Real Life Recipes. Basically, this is how I really eat.
Before getting to the details of this recipe…more like meal idea…. can I point out the maple syrup dribbling down the side of that sweet potato. That alone should make you want this for breakfast. 🙂

So, what (you may ask) is a “Breakfast Stuffed Sweet Potato”? Basically, the sweet potato is a gift to someone on AIP because in this one colorful little gem you’ve got  plus Vitamin A, Vitamin C, Vitamins B1,2,3, & 6 Manganese, Potassium. 
 beta-carotene and a serving of healthy carbs to get you energized for the day without elevating your blood sugar too much. 
 
I love to bake 5 or 6 sweet potatoes over the weekend and have the flexibility to heat one up and turn it into a quick breakfast any day of the week. Add a veggie, a protein and some fruit and you have a complete breakfast to get your day started right. In my mind it’s as if the sweet potato is a pancake that I top with fruit and maple syrup (make sure it’s pure maple syrup and just use a tiny drizzle – 1/2- 1 teaspoon – you just want a taste) and then just add some meat and veggies.
 
Some of my favorite “Breakfast Stuffed Sweet Potatoes” are:
(1) 2 patties of Apple Sage Sausage and a handful of quickly sauteed spinach, with a drizzle of maple syrup and a few strawberries (pictured above)
(2) a couple of pieces of prosciutto pan fried, a handful of blueberries, some maple syrup and a sliced cucumber (pictured below)
(3) leftover steak and broccoli with berries on the side
(4) prosciutto, kale and avocado
(5) sauteed mushrooms and onions with avocado – almost like a breakfast fajita
(6) sausage patties, blueberries, kale and maple syrup
 
The options are limitless and if you pre-bake your sweet potatoes, and have leftover or prepared meats and veggies, breakfast can be ready in 5 minutes, which is something we all need as we rush out the door in the mornings.
