Apple Spice Beef Stew – Slow Cooker or Instant Pot

I realize that the idea of apple spice anything seems more like a fall comfort food…but sometimes, no matter the weather or season, apple spice fits the bill. Plus, to me, beef stew is always a good idea. Beef stew evokes childhood memories of meat and veggies simmering on the stove all day, as well as memories of Africa where beef stew must be eaten with chapatis. This recipe is written for the slow cooker, but it could easily be done by slow simmering on the stove top all afternoon….OR check out the new ‘Instant Pot adaptation’ below. 
Apple Spice Beef Stew
Time: crock pot 8-9 hours OR instant pot 45 minutes total
Serves: 5-6
1 kg grass fed beef – cut into bite size chunks
2 apples – any variety – rough chop
1 large white onion – rough chop
3 or 4 large carrots – bite size chunks
2 T garlic flakes – or – 11/2 T powder
1 t cinnamon powder
1/4 t cloves powder
1 T dried Oregano 
1 t sea salt
1 1/2 cup homemade broth
Crock Pot Method:
– place all ingredients in slow cooker
– cook on low for 8-9 hours 
– if possible, stir after 6-7 hours to keep the meat on top from drying out. 
– meat should fall apart 
– serve as is, or alongside a baked sweet potato or on top of some cassava mash 
Instant Pot Method:
– brown onion and meat in the instant pot with about 1T olive oil until meat is no longer pink (saute setting) – about 5-6 minutes
– add spices and continue cooking on saute for 2-3 minutes
– add remaining ingredients, seal the pot, set to high pressure and cook for 22 minutes
– quick release and serve
– serve as is, or alongside a baked sweet potato or on top of some cassava mash
