Garlic Cilantro Mash

We all know that we need to eat our veggies, but sometimes we get bored of eating them the same way all the time. So, what do you get when you mix boiled carrots and mashed potatoes (or sweet potatoes or pumpkin in this case). Well, you get “Garlic Cilantro Mash” of course. This side dish is quick and easy enough to make on a weeknight, but special enough to grace your holiday table. The depth of flavor of the roasted garlic combine with the brightness of the fresh cilantro/ coriander leaves to give you a flavor that pairs well with roasted chicken, burgers or fish. Plus, there are great health benefits to eating carrots.

Garlic Cilantro Mash

Serves: 4-5

Time: 35 minutes
– 10 cloves garlic
– 1 T olive oil
– 2 cups chopped carrots

– 2 cups chopped sweet potato, pumpkin or butternut squash – cut into 1 inch cubes

– 1/2-2/3 cup broth
– 1/2 t salt
– 1/3 – 1/2 cup chopped cilantro

roast garlic – preheat oven to 450, put garlic and olive oil in a small dish and bake for 25 minutes until golden brown
– boil vegetables (in just enough water to cover them) for about 20 minutes, until fork tender
– drain vegetables
– mash with salt & roasted garlic (with oil)
– add broth until desired mash consistency – return to heat and cook off some liquid if desired
– stir in finely chopped cilantro
– Enjoy!
