Strawberry Cucumber Salad {AIP, Paleo, Low FODMAP}

Sometimes a great idea is right under your nose. This salad is one of those ideas. It combines all the flavors of summer in a simple salad that can be thrown together in minutes It’ll make it look like you put in some effort without actually making the effort. Plus, it’s a great salad to take to a BBQ or other gathering because it keeps well off ice and will surprise people.

This salad combine many of my favorite ingredients and honestly I’m shocked it didn’t happen sooner. Cucumbers always make me think of my childhood. My favorite salad was always ‘cucumber, tomato & onion tossed in oil/ vinegar.’ It was one of the few salads I remember from childhood and this salad is very reminiscent of it, without the scary nightshades.

Strawberry Cucumber Salad
Serves: 6
Time: 10 minutes
– 6 medium cucumbers
– 1 cup chopped strawberries
– 1/4 cup mint leaves
– 3 T parsley
– juice of 2 limes – about 1/4 cup lime juice
– 2 T olive oil
– 1 T balsamic vinegar
– 1 1/2 T honey
– pinch of sea salt
– chop cucumbers into quarters and slice
– chop strawberries into small pieces
– place all other ingredients in a food processor and blend until all incorporated
– pour dressing over salad and mix well
