Sometimes a great idea is right under your nose. This strawberry cucumber salad is one of those ideas. It combines all the flavors of summer in a simple salad that can be thrown together in minutes. It’ll make it look like you put in some effort without actually making the effort. Plus, it’s a great salad to take to a BBQ or other gathering because it keeps well off ice and will surprise people.


This salad combines many of my favorite ingredients and honestly I’m shocked it didn’t happen sooner. Cucumbers always make me think of my childhood. When we lived in Tanzania, our gardener knew how much I loved cucumbers, so when they were ripe he would call me out into the garden, pick one and I’d wipe the dirt off and munch away right there in the garden.

Plus, as a kid, my favorite salad was always ‘cucumber, tomato & onion tossed in oil/ vinegar.’ It was one of the few salads I remember from childhood and this salad is very reminiscent of it, without the scary nightshades.

This salad is a great dish to take along to a summer cookout. Everyone will love it and no one will guess that it’s from your weird diet. 🙂

Description

If you’re looking for a fun and flavorful summer salad, then look no further than this bright and cheerful strawberry cucumber salad. It’s packed with summer’s bounty and tons of flavors, and is the perfect salad to share as it’s totally AIP, paleo, whole 30 and low fodmap friendly.


Ingredients

  • 6 medium cucumbers
  • 1 cup chopped strawberries
  • 1/4 cup mint leaves
  • 3 TBSP cilantro (coriander leaf)
  • juice of 2 limes – about 1/4 cup lime juice
  • 2 TBSP olive oil
  • 1 TBSP balsamic vinegar
  • 1/2 TBSP honey (optional…. leave off for whole 30)
  • pinch of sea salt

Instructions

  1. chop cucumbers into quarters and slice – to make 1/4 circle pieces
  2. chop strawberries into small pieces
  3. place all other ingredients in a food processor and blend until all incorporated
  4. pour dressing over salad, mix well & serve
