Honey Garlic Salmon

 This honey garlic salmon is a fun and flavorful way to get more omega-3 into your diet. After a soak in a simple marinade, this salmon dinner can be on the table in less than 20 minutes and will quickly become a family favorite that will make its way into your meal plan over and over again.

At least once a week I make a simple dinner of baked salmon and veggies. I love salmon for many reasons…it’s delicious, it’s good for you, it’s quick cooking, it’s versatile and salmon is one of the few organic meats that’s easily accessible for me (and not too expensive).

One of my favorite ways to make salmon is to open a piece of foil, plop the salmon fillet on the foil, season, wrap up and toss in the oven for 20 minutes. Perfectly flakey salmon with NO clean up required. I vary the seasonings…various marinades, just salt and lemon, garlic and herbs, dill and lime, pretty much whatever I grab when I reach into the spice cabinet. 🙂

If you choose not to choose foil, you can do the same thing with a pouch of parchment paper. Or… as I do most of the time these days, simply bake on top of the parchment paper for still a limited amount of clean up.

I don’t think you need another reason to have salmon for dinner, but just in case you do… honey, lemon, ginger, oregano…

Description

This honey garlic salmon is a fun and flavorful way to get more omega-3 into your diet. After a soak in a simple marinade, this salmon dinner can be on the table in less than 20 minutes and will quickly become a family favorite that will make its way into your meal plan over and over again.


Ingredients

  • 10-12 ounce piece of salmon fillet
  • Juice of 1 lime (more for squeezing before serving)
  • 1/2 TBSP olive oil
  • 1 TBSP honey
  • 1 tsp dried ginger or 1/2 inch fresh ginger – grated or finely minced
  • 2 cloves garlic – finely minced
  • 1/2 tsp dried oregano
  • 1/4 tsp turmeric  powder
  • 1/2 t sea salt

Instructions

  1. mix all of the marinade ingredients (everything except salmon) in a ziptop bag
  2. add the salmon and massage to evenly coat it
  3. marinate for 30 minutes in the fridge
  4. preheat oven to 350F/180C
  5. line a baking dish with parchment paper, place the salmon on the paper and pour what’s left of the marinade over top
  6. bake 15-18 minutes (depending on how thick your salmon is and how well done you like your fish. a thick piece at 15 minutes will still be a little pink).
  7. let it stand on the counter for a couple of minutes
  8. serve with salad and other veggies

Notes

To make this a simple one dish dinner, add baby asparagus or small pieces of broccoli to the dish before baking and drizzle with olive oil. Then serve the salmon and veggies with a simple salad.
