Garlic Honey Salmon {AIP, Paleo, Whole30}

What are your go to meals? What do you make when you’re short on time? What do you always have in the fridge foe meal emergencies. If you’re having a hard time thinking on something, then might I suggest this salmon…. I would also suggest checking out this post on 30 minute meals for more inspiration.

At least once a week I make a simple dinner of baked salmon and veggies. I love salmon for many reasons…it’s delicious, it’s good for you, it’s quick cooking, it’s versatile and salmon is one of the few organic meats that’s easily accessible for me (and not too expensive).

My favorite way to make salmon is to open a piece of foil, plop the salmon fillet on the foil, season, wrap up and toss in the oven for 20 minutes. Perfectly flakey salmon with NO clean up required. I vary the seasonings…various marinades, just salt and lemon, garlic and herbs, dill and lime, pretty much whatever I grab when I reach into the spice cabinet. 🙂

We are know that salmon is good for us, but what are some of the benefits of eating this power house food? Check out these stats…4 ounces of wild salmon contains more than 100% of a days worth of vitamin B12 & vitamin D, 78% of your selenium needs, 55% of Omega-3 fats, plus tons of other vitamins and minerals. I don’t think you need another reason to have salmon for dinner, but just in case you do… hone, lemon, ginger, oregano…

Garlic Honey Salmon
Time: 1 hour

Serves: 2


10-12 ounce piece of salmon fillet
Juice of 1 lemon
1/2 T olive oil
1/2 T honey
1 t dried ginger or 1/2 inch fresh ginger – grated
1 t garlic powder
1/2 t dried oregano
1/4 t turmeric  powder
1/2 t sea salt

– Mix all of the marinade ingredients (everything except salmon) in a ziptop bag
– add the salmon and massage to evenly coat it
– marinate for 30 minutes in the fridge
– preheat oven to 350F/180C
– place salmon on a piece of foil and pour what’s left of the marinade over top
– fold up the salmon in the foil making a pouch – pull all sides up to the middle and crimp together sealing tightly
– place the pouch in a baking dish (in case the marinade leaks)
– bake 18-20 minutes (depending on how thick your salmon is and how well done you like your fish. a thick piece at 18 minutes will still be a little pink.
– let it stand on the counter for a couple of minutes
– open pouch and serve with salad and other veggies
