Summer Cobb Salad {AIP, Paleo, Whole30}

What’s your favorite thing about summer? Living in Dubai my favorite thing is getting to spend more time with friends as work schedules are generally less intense and the few people who haven’t left to avoid the heat are more keen to meet up and hang out. The funny thing here is that we, here in Dubai, look forward to the winter in the way that many of you look forward to the summer, because it means that we can be outside and enjoy sunshine and blue skies.

Sometimes in the summer I make it back to the States for a couple of weeks. One of my favorite things about visiting the States in the summer (other than seeing my family) is eating all of the salads with berries and other fun toppings. I love that even fast food restaurants have fun salads during the summer, full of flavor and color (albeit not 100% aip compliant, they can be a smart choice if you avoid the sauces and extra toppings). But, I find that as good as those salads are I’m always wishing for something more…can I have some bacon, or avocado, or more berries would be nice. This salad allows you to combine all of your favorite foods and make your salad as colorful and flavorful as you want….more avocado? why not?

Although this salad is named ‘summer cobb salad,’ it can be enjoyed year around and it will serve to remind you of colorful and relaxed summer days.

If you do a little prep when you come home from the store, this salad can be thrown together in a matter of minutes and is good with either steak fresh off the grill or leftovers from a cookout.
Summer Cobb Salad
Serves: 2-3
Time: 30 minutes (or a lot less if you have pre-prepped foods)

Salad Dressing
1/4 of a haas avocado

3 T avocado oil
Juice of 1 lime
Handful of cilantro leaves
1/4 salt
** blend all ingredients & chill until ready to use
Grill the Steak
– marinate an 8-12 ounce steak in lime juice for at least 30 minutes
– sprinkle with salt
– grill over a medium heat (grill pan or grill) until desired doneness. I prefer medium well and do this by flipping every minute until it feels done (press the steak with tongs and there should be a slight give, but it should feel firm).
– remove from heat and let it rest for at least 5 minutes before slicing and adding to the salad

Build the Salad
– fill a bowl of serving dish with romaine or mixed baby greens
– arrange the following ingredients in rows on top of the greens

  • 1/2 sweet potato – 1/2 medium sweet potato, baked or microwaved & cut into cubes – or leftover roasted
  • 1 avocado – cut into cubes
  • 1 cucumber – cut into slices
  • 4 spring onions – greens only – chopped fine
  • 1/2 cup + large strawberries – cut into pieces
  • 1/2 blueberries
  • 3 slices of chopped bacon – crumbled
  • steak sliced

– drizzle with dressing and serve
