Rustic Apple Crisp + 41 Amazing AIP Apple Recipes

This is my favorite time of the year. I love fall!

It’s all about the weather cooling down, leaves changing colors, bonfires, wearing hoodies and hanging out with friends. Oh wait… I live in Dubai and MOST of those things don’t exist here. Here, fall is about weather dropping below 100F (well some days), walks in the evening, going to the beach, and hanging out with friends. Okay, 1 out of 5 isn’t bad. 🙂

 
But, just because I live in Dubai, that doesn’t mean that I can’t enjoy the fun of fall back in the States. I put out my fake leaves and fake acorns, I light candles that smell like fall and I make everything apple or pumpkin. In that spirit, let me present a rustic apple crisp for your eating pleasure. 

Back in my pre-AIP days, my favorite desserts to make were simple fruit crumbles or crisps or cobblers. I always found those recipes to be very forgiving and didn’t require all the careful measuring that many baking recipes do. Simply toss some fruit in a pan and mix together some flour & sugar and voila dessert was in the oven.

Then came AIP… and baking (of any sort) became a challenge. I didn’t know how the flours worked… if I could even get my hands on them. Nothing was simple. This crisp however, will remind you of your pre-AIP fruit crisp days.

This Apple Crisp only uses a tiny amount of flour, and yet it gives you a perfectly crispy topping. And, it’s totally approved by ‘non-AIP’ friends. I’m even planning on serving this for Thanksgiving this year instead of trying to make a real pie. 

Rustic Apple Crisp {AIP, Paleo, Nut Free}

Serves: 8
Time: 1 hour and 20 minutes


Ingredients:
Filling
5 apples
1/2 t cinnamon
1 T coconut sugar
juice of 1 lemon

Topping
2 ripe plantains
3T cassava flour
1/2 t sea salt
1/2 t cinnamon
1/8 t cloves
6 T lard (or coconut oil)
1/4 cup maple syrup
1/3 cup shredded coconut
1 T coconut sugar

Method:
– peel and thinly slice apples
– toss apple slices with 1/2 t cinnamon, cocout sugar and the juice of 1 lemon
– place apple slices in a medium sized baking dish
– preheat oven to 375F
make the topping – Peel and grate plantains (using a food processor or grater). Mix plantains, cassava flour, sea salt, cinnamon, cloves, lard (melted), maple syrup and shredded coconut until a dough is formed.
– use the back of a spoon to spread the dough over the top of the apples
– sprinkle 1 T coconut sugar over the top of the dish
– bake at 375F for 1 hour
