This cucumber quick pickled salad was created as the perfect topping for my Ginger Beef Lettuce Cups… but it is also a fun topping for taco night or your favorite curry as the onions and vinegar add a spicy kick to many dishes. If you have a few minutes, you can make this pickled salad and enjoy it for dinner tonight.

I’ve been working since I was 14 years old and I’ve done had some random jobs… babysitter, clarinet lesson instructor, tutor, postal clerk, nanny, childcare worker, preschool teacher, maid, church custodian, children’s sports photographer, linens salesperson, substitute teacher, church secretary, children’s ministry director, blogger and most recently homemaker. The crazy thing is that of all these jobs, there is only one I’ve ever really dreamed of…. (well as I kid I wanted to check the mail, so working in a post office was almost my dream job – true story). 
And… today is day 143 of that dream job… but only day 2 since I got to start it in earnest – full time. 
The last 2 days I’ve had the privilege of sending my hubby off to work and staying home. This is the job I’ve always wanted. I’m hoping the extra time will allow me to work harder at making our apartment a home, open more opportunities for hospitality, give me time to do the chores so I’m not so rushed and pre-occupied when my hubby comes home, provide time to meet up and encourage more women in the church, and spend more time creating recipes for all of you. 
Yesterday I was thrilled to be able to clean the apartment in the day light and get 2 loads of laundry done. It’s the little things, and I love finding joy in the little things.
I know a lot of people find it weird that someone with a master’s degree would be excited about being a homemaker and some scoff at the idea, and say I’m wasting my life. Others assume I’m lazy and spending the day at the spa. So, I’m putting this out there now for all of you to hold me accountable. If you see me slacking off…let me know. I desire to be like the woman in Proverbs 31 who works hard to serve and care for her family and her household and does all she can, in and out of the home, to bring honor to her husband and provide for her family. 
Ok, enough about me. 
I know you’re here for the food. So, let’s get on to the recipe. It’s time for you to get those cucumbers ready, so we can make this quick pickled salad.

Quick Pickled Cucumber Salad {Paleo, AIP}

Serves: 3-4 servings
  • 1 medium cucumber
  • 1 medium red onion
  • ¼ tsp pink himalayan salt
  • 2 TBSP apple cider vinegar
  • Juice of 3 limes
  1. thinly slice & quarter the cucumber
  2. thinly slice onion
  3. toss onion and cucumber together in bowl
  4. in a 2nd bowl, mix together the salt, apple cider vinegar and lime juice
  5. pour liquids over cucumber and onion and toss to combine
  6. cover and refrigerate for 25 minutes
  7. use to top some of your favorite dishes
