About this time last year I was busy finalizing wedding plans and getting the apartment ready for my new hubby to move in. I wanted to do things that would make him feel like it was his home too, so I was changing out the pictures on the wall and making space in the dresser and closet and trying to make the place seem less like a girl’s apartment and more like our new home.

One of the things I did was make a pillow with all the places and dates and special memories Joseph and I had shared so far. I included date spots and nicknames and all kinds of things I wanted us both to remember.

My mom saw it a few days later and was looking at the various words and she got to “BF Monster.” She assumed it was some sort of nickname and wanted to know why I called Joseph a monster.

I laughed and explained that one of our favorite date locations is Burger Fuel and our favorite burger to order is called the BF Monster…. his as on the menu… mine in a lettuce wrap with no tomato, sauce or cheese.

What’s in this AIP Burger Bowl?

This burger bowl combines the best of the flavors of the BF Monster into a burger salad that you can enjoy at home any night of the week.

It’s a generous serving of salad greens, topped with onion, mango, grated beetroot, bacon, avocado and of course a burger. The flavors combine so well for a perfect bite. Spicy onion, crunchy bacon, creamy avocado, sweet mango, plus all the veggie goodness of greens and beetroot.

PLUS… this salad is totally hubby approved. My hubby rarely comments positively or negatively about food. But this one got high praise for dinner and again for lunch the next day!

Since we’ve always enjoyed this burger for a date night, might I suggest that you do the same. This AIP burger bowl pairs well with a board game night OR it packs well for a picnic to your local park.

Description

This AIP Burger Bowl is the perfect way to have your burger and eat it too all while staying 100% AIP. Plus, with all the flavors in the toppings, you won’t even miss the bun. It’s got spicy onions, sweet mango, creamy avocado and crunchy bacon. What more could you possibly want from a burger?? 

 


Ingredients

For every 2 burger bowls:

  • 4-6 cups of your favorite salad greens – I like a mix of baby spinach and a spring mix
  • 1 small mango – cut into small dice
  • 1 avocado – roughly mashed
  • 1/2 small red onion – thinly sliced
  • 4 slices of bacon – cooked
  • 1/2 cut of grated beetroot (I like to buy spiralized beet noodles in the produce section and chop them a bit to make less of a mess
  • 2 1/4 pound burger patties – cooked to your preference

For the burgers:

  • 1/2 pound ground grass fed beef
  • 1/2 tsp sea salt
  • 1 tsp garlic granules
  • 2 tsp olive oil

Instructions

  1. mix and form burgers
  2. heat olive oil over a medium heat in a skillet or grill pan
  3. cook burgers until preferred doneness – about 5 minutes on the first side and 4 minutes on the 2nd side for medium (longer if you prefer well done)
  4. while burgers cook, prep your salad ingredients: slice onion, dice mango, mash avocado, cook bacon, grate or chop beetroot
  5. assemble salads: lettuce mix, beetroot, onion, mango, bacon – top with burger and then mashed avocado

Notes

This burger bowl is great on it’s own or pairs well with roasted sweet potatoes or sweet potato fries.
