Maple Balsamic Roasted Sweet Potatoes

  • 2 large sweet potatoes
  • 1/4 cup maple syrup
  • 2 TBSP balsamic vinegar
  • 1 TBSP olive oil
  • 1 tsp sea salt


  1. preheat oven to 375 F
  2. line a baking pan with parchment paper
  3. wash and cut (peeling optional) sweet potatoes into 1 inch cubes
  4. place sweet potatoes in a plastic bag or large bowl
  5. mix remaining ingredients together and pour over sweet potatoes… shake or toss to evenly coat all of the sweet potatoes
  6. place on parchment lined pan – spread evenly – cover with foil and bake for 30 minutes. Remove the foil and bake for 10 minutes- then increase temp to 450, give the sweet potatoes a good toss and bake an additional 15 minutes to get them crispy
  7. sprinkle with a bit more salt and serve
